Herb Roasted Potatoes
2 1/2 lbs. Potatoes, (of your chose) cut into 1inch – 1 1/4 wedges.
2Tbs. Olive Oil
1/2 tsp. crushed dried Rosemary
1/2 tsp. salt ( I prefer Kosher)
1/2 tsp. dried Oregano
1/4 tsp onion powder
1/4 tsp. pepper
2 Tbs. chopped fresh parsley.
Preheat oven to 350 degrees. Coat large baking sheet with cooking spray of your choice
In a large bowl, toss potatoes with oil and all your seasonings. Spread out in a single layer on baking sheet. Roast 1 hour, turning portions over halfway through roasting time and toss with parsley and transfer to the serving bowl.
